Do you miss summertime yet? As we are looking out the window at snow, we sure do. So we thought we'd whip up a cake to make us feel a little warmer inside at least. A fresh citrusy lemon olive oil cake with a heaping dollop of Strawberry Limoncello Deliciousness cream cheese frosting did the trick.
2 cups of cane sugar..we like our sugar gmo free
2 cage free eggs .. we like our eggs guilt free
1 cup vanilla yogurt ..we like it with the fat
3/4 cup olive oil .. dealer's choice
zest from 2 large lemons
2 cups self rising flour ..or adjust for regular flour w/baking powder & salt
1/4 cup of cane sugar
1/2 cup lemon juice ..from those lemons above. Don't use that gross bottled lemon juice.
1 16oz block of cream cheese
1/4 stick butter
1/8 tsp. vanilla extract ..good stuff, check the label for real vanilla
3 TB Strawberry Limoncello Deliciousness
1/2 powdered sugar
1 tsp chopped fresh basil
Get your oven rolling. That means fire it up to 350º. While it's getting up to speed, warm up your arm muscles by whisking together the sugar and eggs. Then mix in the yogurt and finally add the olive oil and lemon zest. Restrain yourself from eating this as is...it is delicious..but it's better if you wait. Ok..now fold in that flour, gently.
Pour into either one 9" cake pan, or our favorite...4-6 mini spring form cake pans.
Bake for 45 min for the big pan or about 20 min for the smaller pans. Check for doneness by inserting a cake tester or knife or matchstick into the center. When it comes out clean..you are good to go.
While you are hovering over the oven trying to keep warm, start working on the glaze and frosting. Yeah both. For the glaze, mix together the sugar and the lemon juice to make a syrup. Simple. When the cake is done baking, fork up the top and pour that glaze over immediately. Let cool in the pan(s), then remove.
Now for the best part, the frosting. Either get your mixing arm warmed up or bust out the mixer and start beating that creamcheese and butter into a soft creamy mix. Slowly add the vanilla and Strawberry Limoncello Deliciousness until fully mixed, now add the powdered sugar until fully mixed, then add the chopped basil. That'll do it.
When those cakes are done cooling off, dollop a big spoonful of frosting on top. Put more on the side because your eaters are going to want more. We garnished with an arugula flower and a basil leaf. Add cracked black pepper if you are daring.
