IPA Lemon Herb Grilled Salmon

This super simple recipe will make you look like a pro in less than 30 minutes.

Ingredients:
(2) 6 oz Salmon fillet about 1" thick (1 fillet per person)
2 TB Canola or vegetable Oil
2 Tsp Salt
2 Tsp Pepper
2 TB IPA Lemon Poppy Deliciousness
2 Lemon slices
1 Tsp Fresh thyme, leaves only (chives are a great substitute)

Heat your grill to medium high. If using charcoal grill make sure to set up your grill for indirect grilling. Place your charcoal on one half of the grill, placing a drip pan on the other side. When the grill is hot the salmon will be placed on the side over the drip pan.

Season your salmon with salt and pepper. 

When your grill is hot, prep the grates with the oil. You may also lightly coat the salmon with oil to prevent sticking. Grill salmon for 4 minutes on each side. For classic grill marks rotate salmon a quarter turn half way through on each side.

While the fish is grilling away cut 2 whole lemon slices(full round.) Make one cut into each slice starting at the center going to the outside. About 2 minutes before the salmon is done top each fillet with 1 TB of IPA Lemon Poppy Deliciousness, and coat evenly. After finished grilling pull off of heat and sprinkle with your herb of choice. Take your lemon slice and twist it open and place flat on top of the salmon. Plate, and prepare to impress your date! Easy as can be, but oh so good.
